Tenimenti Civa wines are produced exclusively with grapes from my estate and small local vineyards. Our production philosophy is encapsulated in the logo “85 15” on the wine labels, where 85% stands for the DOC varietal and 15% for the best varieties on the estate.
he wine preserves the typical characteristics of each cultivar and, at the same time, is enriched with fragrances and aromas, precisely thanks to our choice of unique assemblage.
Tenimenti Civa are the result of lengthy checks carried out on the terrain and selection of cuttings plus skilled working of the soil. We do not use chemical weed killers and only use fertilisers when necessary.
We carefully prune and work in the vineyard, focusing on low yields to obtain the best results in terms of quality. We patiently await the moment the grapes ripen and then delicately harvest them by hand.
Once in the winery, we separate the grapes from the stems and press them gently. Fermentation and subsequent ageing take place in steel vats and the wine is only ready for sale after suitable resting in bottles.
We have decided to use pictures to explain the techniques and procedures behind production of a quality wine, from winter cutting back in the vineyard through to bottling. Our desire is to make you feel like real vignerons: a part of our wines also becoming yours.
